Ingredients

For the dough:

400 g SoDelishUs® Bread Mix

100 g SoDelishUs® Flour Mix

7 g dried yeast
-
50 g melted plant-based butter
-
12 g SoDelishUs® Tabletop Sweetener
-
350 g almond milk
-
14 g orange zest
-
10 g lemon zest ( dried or fresh)
-
4 g salt
-
4 g cinnamon
-
4 g mixed spice
-
For the cross:
-
40 g SoDelishUs® Flour Mix
-
90 g water
-
For the glaze:
-
50 g SoDelishUs® Apricot Jam
Directions
In a large bowl, mix together the warm almond milk, the melted plant-based butter, the lemon and orange zest, the raisin and the SoDelishUs® Tabletop Sweetener and let set for a minute.
Add the SoDelishUs® Flour Mix, the SoDelishUs® Bread Mix, the salt, and the dried yeast to the mixture and mix with a wooden spoon until just combined and knead a dough. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 60 minutes.
After 60 minutes, divide 12 pieces and roll ball shapes from the dough, and let rest for another 60 minutes.
After 60 minutes, preheat the oven to 180˚C. To make the cross, in a small bowl, mix together the SoDelishUs® Flour Mix with the water at a time to create a thick, pipeable paste. Spoon it into a piping bag fitted with a small round nozzle and pipe crosses on the buns.
After that, bake the buns for 20-25 minutes, until golden brown and cooked through.
Meanwhile, gently heat the jam in a small saucepan over a low heat to loosen. Pass through a sieve to remove any lumps. Once cooked, brush the warm jam over the tops of the buns. Set aside to cool a little before eating.
