Red Velvet Cake is a basic cake, but with a little finesse with the ruby red SoDelishUs and velvety sponge. Only a few steps and you can enjoy this healthy cake with your family!

Ingredients

500 g SoDelishUs® Sponge Mix

270 ml water

25 ml vegetable oil

11 g low-fat cocoa powder

2 tbsp liquid red food colouring

1 lime juice

For the icing:
-
250 g plant-based cream cheese
-
500 ml plant-based whipping cream
-
100 g SoDelishUs® Icing Powder Sugar Replacer
-
2 lime juice
Directions
In a medium bowl, add the SoDelishUs® Sponge Mix the low-fat cocoa powder and stir to combine, then add the liquids ( red colouring, water and lime juice) to the dry ingredients and mix them well, until smooth.
Preheat the oven to 180 C. Pour the mixture in a 18 cm baking tin and bake for at least 50 minutes, or until cooked through, then let it cool down.
For the icing, add the plant-based cream cheese to a medium mixing bowl and mix with the lime juice and the SoDelishUS® Icing Powder Sugar Replacer. In another mixing bowl, whip the plant-based whipping cream halfway then add the vegan cream cheese mixture and whip together, until forming a thick cream.
When the sponge cooled down, cut the cake half then fill with the cream.
Recipe Note
Have you tried red velvet cupcakes? You can use the same recipe, just divide the cake mixture into 12 muffin moulds, cook them and decorate the muffin tops with the cream cheese filling!
